basic-ass opinion but you gotta bring up Johnny Cash's cover of Hurt:

"Burning Down the House" by Talking Heads is a great song by a terrific band, but every cover I've heard has surpassed it.
Tom Jones and The Cardigans. Wacky musical collabs like Lady Gaga and Tony Bennett always make me happy, but then that wacky collab covers a song that is in and of itself wacky is a recipe for success. Tom Jones just belting it out and facial expressions that give David Byrne a run for his money in the weird delivery department, while Cardigans lady casually delivers it with such finesse is just great.
Not everyone's gonna agree with The Used cover being better, but I think Billy Cobb has made me a sucker for any punk cover of a song and this one is no exception. Also, it's just legitimately really good.
Finally, the Paramore cover is just the best. It stays true to the original, while also putting a new spin on it and kicking major ass. Hayley's delivery in this is sublime.
